Les Cinq Filles Brut Rosé is made with biodynamically farmed Pinot Noir grapes from the 2012 vintage in the Aube. The saignée method of Rosé winemaking, combined with the long sur latte ageing, gives this champagne a wonderful depth of flavour and colour. With a core of blood plum, raspberry and red apple skin, this is a finely balanced cuvée with zesty acidity.

Viticulture Biodynamic
Vinification The grapes are crushed and macerated for just under 24 hours before being pressed. The juice is separated according to the rules of the Champagne, followed by debourbage (settling), then by alcoholic fermentation in stainless steel vats and malolactic fermentation. The wine rests in stainless steel vats for several months before tirage and second fermentation in bottle «prise de mousse».

The plate

This Rosé is sufficiently robust, balanced and dry to accompany richer main courses. It pairs perfectly with duck, lamb or poultry served with dried fruits or cherries. Les Cinq Filles Rosé is also a delightful match for a creamy risotto, or even a dark chocolate dessert.
